Steba SV 50 Sous-Vide Stab

The Steba SV 50 clamps to the side of a pan you already own rather than occupying a worktop, and turns it into a sous-vide bath. It circulates 8 litres a minute so the water sits within half a degree of the set point, which is the difference between an evenly pink steak and a grey band at the edge. The illuminated LCD shows both the current and target temperature, and the timer runs up to 99 hours for long braises. Any pot from 15 cm deep will do.
