Two paddles work the dough from both sides, developing gluten more evenly and thoroughly. The result is better rise, a more open crumb and improved texture — most noticeably in sourdough, ciabatta and brioche. Can the ArtisanPro make sourdough bread? Yes — the dedicated Sourdough programme is designed for use with live starter (levain) rather than commercial yeast, using a longer, cooler fermentation cycle to develop flavour. You'll need to maintain your own starter separately. What's the difference between the ArtisanPro and the QuickBake? The ArtisanPro HB8202BMP has dual kneading paddles, 16 programmes (including Sourdough, Brioche, Ciabatta), a 15-hour delay timer and a 60-minute Keep Warm. The QuickBake HB8103BMW has a single paddle, 14 programmes, 13-hour timer — and the 58-minute Express Bake if speed is the priority. Does the 15-hour delay timer work for sourdough? The delay timer is ideal for scheduling a standard yeast loaf to be ready in the morning. For sourdough, many bakers prefer to start it manually given the variable fermentation time of live starter.
